The 2023 Dott. Prosecco is a refreshingly crisp and sezty sparkling wine with fragrant apple blossom, kaffir lime, Nashi pear and a chalky personality. Pale in the glass with a delicate fizz, this wine is drier than most with a lovely gentle texture and moreish finish. - Chalmers

Chalmers Vermentino is a truly unique iteration of the Mediterranean grape, pressed and wild ferment in tank, the 2022 vintage was cool, bringing out characters of Meyer lemon, white stone fruits, raw pine nuts, salt bush and lifted native florals.  The palate is crisp and refreshing, just what you want to drink in spring and summer on the beach with some fish and chips or gobbling down some prawn and pork dumplings.

Aglianico 63%, Nero d’Avola 20% and Sagrantino 17%. Chalmers describe this as being ‘imminently’ drinkable on their website, and with that, I thought I had better try it very soon. Red cherry, blood orange. Juicy, some powdery texture, maybe a little sweetness with a twist of Campari through red fruits, a bit of crunch to acidity and a finish of solid length, pleasing twist of bitterness to close. Pecorino offers a glimpse into the future, where climate change will encourage the planting of more Mediterranean grape varieties in Australia. It shows its class here with with the lifted scent of honeysuckle, citrus and baked apple. Rich and textural, it fills the mouth with delicious flavour that goes and goes, replete in peach, nectarine and dried herbs wrapped in a light blanket of honey. The 2022 Dott. Nebbiolo is pale rose in colour with a little brick tinge. Its nose with lifted rose petals, wild strawberries, Damson plum, charry earth and a muscular perfume. The palate is classic young Nebbiolo, a core of red berries and lifted red florals with dry fine dusty tannins and pleasantly persistent. - Chalmers

This is a grippy white wine with floral and stone fruit characters aplenty, matched to cooked apple, guava and brine. It's ultra-textural, and dry with it. Length isn't a strong suit here, but that didn't stop me from wanting to hook into it with gusto, thanks to the combination of mouth-watering acidity, lively flavour and all that grip. - 90 points. A digestive style and crystal clear in the glass, ‘The Spirit’ is a pure, driven expression of Moscato Giallo, lifted and aromatic with chamomile flowers, pearl barley, caraway seed, loquat and grape skin notes. It’s got some fire paired with a generous mid palate to help tame the alcohol.  The Spirit will sit comfortably on the dinner table at the completion of a meal, where it’s deliciously drinkable straight up, or as the hero in an aperitif style cocktail, depending on what takes your fancy. - Chalmers

This labour of love resulted in a wine that is luscious and exotic, with yellow box honey-soaked dried Muscatels, treacle, bacon maple, super lifted aromatics of orange blossom, perfumed wattle and coriander seed.  The mouth is opulent, with baked figs, burnt English toffee, caramelised onion, short crust pastry, shitake mushroom and umami.  It’s a food pairing delight, perfect with those baked desserts, pear tarte tatin, spit roasted pineapple and a mouldy cheese match made in heaven. The finish is uber long and unrelentless, balance nicely with a weft of bright tangy citrus.  This will age very well, the longer you keep it, the more savoury it will become, masking the sugar into more of those umami, bacon and mushroom notes.

Hand-picked fruit, whole-bunch pressed, fermented wild then aged on lees in old French puncheons. Vegan friendly. Makes quite a splash with its cheery, citrusy personality. Lively and fresh, it launches into full-on citrus blossom perfume with honeysuckle, lemon, white peach and musk. Joining the fresh fruits are some rhubarb pastries and red liquorice, which combine to deliver a really fun sparkling wine with enough depth to match with a weightier dish of seared, juicy beef, and roasted peppers, freshly cut herbs and creamy polenta. The Dott. series of alternative grapes brought into Australia by Chalmers is dedicated to the late Dr. Rod. Bonfiglioli, who encouraged the family in their pursuit of the new and unusual to this country. The grape grows in Friuli, Italy and Slovenia. Light straw hue. Delicate aromas of snow pea, apple, citrus and jasmine. It stretches out on the palate, extending its flavour reach to include muscat, nougat and dried pear, brought into line nicely by firm acidity. "Destemmed, wild fermented, left 30 days on skins, pressed to chestnut botte. The classic southern Italian red grape is incredibly well suited to the climate and soils of Heathcote. Each vintage re-affirms that. A complex, fleshy expression of the grape is wrapped in black cherry, white pepper, allspice, dark chocolate, licorice and a gentle savouriness.
