Smoked meat and damp earth, floral, spicy and peppery, dark cherry and pomegranate syrup. It’s medium-bodied, but thick in texture, meaty and spicy, fresh blackberry acidity, chalky crushed rock tannin, sarsaparilla richness, but all earthy, saline and firm. It’s kind of wild and woolly, but so distinctive and good.
