Dried citrus fruit, green apples, bread crumbs, croissant, pain au chocolat, loquat and nectarines. The bubbles here are so, so fine, and the body and structure are just as sleek and well-formed. Laser-guided and precise on the finish. Drink now.

The Solessence Nature is a very interesting beast indeed. Sourced 50% from the 2013 vintage and 50% of reserve wines, there is nothing simple about this. The nose has that earthy element that comes from the high proportion of Pinot Meunier, a grape that is all red fruits and sunshine when young and then develops into something darker and more brooding.
On the palate, there is something of the festive season about it. Dried orange peel, nutmeg, cinnamon, cloves and spice combine with blood oranges, kumquats, quince, green apples, vanilla, redcurrants, raspberries and those moreish German Christmas biscuits. Rich, complex and interesting, this is a dinner champagne if ever I tasted one, time to cook up a storm! 94 points.
