Quite the classical Fiano, this is seductive, ripe and floral, with lively acidity and a gentle mousse. In 2022, this is drinking really well and if you are unsure as to what to do with such a cheeky delight, try a garlicky, sticky pork belly (or tofu!) with rice, greens and black sesame seeds.

The superb and highly original Chalmers Felicitas Sparkling Fiano is a traditional-method sparkling which takes its name from the Roman Goddess of fertility, good luck and happiness. Made from 100% Fiano grown at an elevation of 150-170m on the red Cambrian soils of the family’s vineyard in Heathcote, it spends more than two years on lees. Fiano is a star performer in the Heathcote vineyard with lovely natural acidity which means, even in the warm conditions of Colbinabbin it can make a sparkling wine with finesse, definition and freshness without the need for acid or sugar adjustment in the winemaking – a true sign that the grape is a great match for the site.
