Notes
We tend to like our Grüner to be on the leaner side of the ledger. We pick the grapes early, then press the juice to tank. We let the wine ferment naturally, on full solids at its own pace. The only thing we do is stir the wine every day to help build up mouthfeel and structure to balance the acidity. Once the ferment is finished we let the wine sit before we bottle it un-fined and unfiltered.
The 2022 has aromas and flavours of Cashew, apple and Mirin. The palate has a tight edge, but there is some yeasty flavours and structure from the stirring of the lees. The nuttiness continues on the palate with some hints of citrus showing through. Texture is the name of the game here, and this wine has plenty. Great with Palatschinke and Broadbean Hotpot.
