Felicitas is a traditional-method sparkling Fiano named after the Roman Goddess of fertility, good luck, and happiness. This grape is a star performer in the Chalmers family’s Heathcote vineyard, where its lovely natural acidity means it can make a sparkling wine with finesse and freshness without the need for acid or sugar adjustment in the winemaking. A true sign that the grape is a great match for the site. The 2022 Felicitas was handpicked with primary fermentation in stainless-steel tank to retain freshness. Secondary fermentation took place in bottle, where it stayed on lees for almost three years before disgorgement with no dosage.
