Grape variety: Cabernet Franc / Land: Sandy-gravelly / Planting: 1981 / Culture: Biodynamic / Harvest: Hand-picked / Yeasts: Indigenous / Winemaking: Whole bunch of grapes in carbonic maceration.
In a thirst-quenching wine style, this is an expression of carbonic maceration. This juicy wine is intense on the nose. Beautiful whole grapes, gently vinified and above all, not crushed. A tribute cuvée to Frédéric.
Composed of sand and gravel, this terroir has the particularity of storing heat to return it to the vine when it needs it. All our grapes are harvested by hand and no insecticide is used on our vines that are about forty years old. Vinified with the stalks of the grapes, this wine reveals the singularity of carbonic maceration. This wine is macerated for 10 days in very large and shallow vats. This fruity cuvée is then pressed. The yeasts are indigenous and the wine has 30 mg/L of sulphites in total. – Nathalie, Charly and Rémy Mabileau
