2023 Onannon Shoreham ‘Wynnton Ridge’ Chardonnay

Established in 1994 by David and Marilyn Jones, Wynnton Ridge Vineyard is a passionately family-owned vineyard that is situated on the 6-hectare grounds of an old dairy farm, which served the Red Hill and Shoreham region more than a century ago. The chardonnay is planted to 10 Clone. The vineyard is non-irrigated and south facing.

Pressed straight to barrel with full solids in a stainless steel egg fermenter. 100% MLF. No new oak. Left on gross lees and no sulphur until just prior to bottling in July 2024. Hands off winemaking.

This is an incredible site. A south facing steep slope that drops all the way to a serious stitch inducing depth if you ever walk it. There is incredible acid retention in this vineyard, the Chardonnay is protected from the afternoon sun and is always a slow burn. In 2023, we picked when Macedon was kicking off.

The 2023 Chardonnay was my first time making this wine, so I wanted to let the fruit sing. I used old oak with very minimal intervention. This wine shows so much minerality, with notes of anise and curd. Zero primary fruit. Notes of baked apple, cinnamon and a touch of custard on palate. – Will Byron, Onannon
