Fruit-driven aromas of yellow apple together with a little strawberry sorbet and a hint of lime. Textured but light on its feet at the same time. Notes
Hand-picked Pinot Noir from a single block of 777 from the Napoleone Vineyard was gently whole- bunch pressed with an extraction rate of 400 litres per tonne to limit skin contact, colour, and phenolic extraction. The juice was fermented with native yeasts in temperature-controlled stainless steel tanks. A long, cool fermentation preserved its vibrant aromatics, freshness, and fine texture, highlighting bright fruit and purity. – Jarrod Johnson, Airlie Bank
