Notes
The Shiraz came from two blocks of our Naploeone vineyard in Coldstream. 75% of the wine came from a block of PT23 Shiraz planted in 1991. This portion was de-stemmed, underwent a whole berry natural fermentation in a 5t fermenter with twice daily gentle pump overs. The remaining 25% of the wine came from a younger planting of Tahbilk Shiraz. This parcel of fruit was kept as whole bunches and underwent a 100% whole bunch fermentation with indigenous yeasts. The fruit was pressed after 21 days on skins to a combination of new (30%) and used French oak barrels, where the wine underwent malolactic conversion and then had a further 15 months maturation in oak.
