NV G.D. Vajra Chinato Barolo

The production of Chinato is a magical moment: it evokes the atmosphere of the late eighteenth-century apothecaries. Alembics, the aromas of wine, herbs and spices merge and blend, creating entirely new sensations. – Aldo Vaira

Barolo Chinato is an ancient Piedmontese digestif. The wine used as the production base is Barolo Albe DOCG from the current vintage. It is then subjected to “chinatura”, meaning the addition of infusions of around thirty herbs, peels and plant roots, including cinchona (Cinchona calisaya), from which the name derives.

This is 85% Barolo Albe DOCG infused with 15% hydroalcoholic extracts of aromatic and medicinal herbs.

Every Chinato has a secret recipe, but some aromas (first and foremost that of Barolo) are so evident that they cannot be concealed. In selecting the herbs, preference has been given to those with specific digestive, decongestant and relaxing properties, drawing generously from the rich botanical heritage of the Alps surrounding Piedmont. Organic Sicilian orange peels, spices and cane sugar complete the process.

Deep ruby red in colour. On the nose it offers the typical freshness of our Barolos, with a weave of rose and ripe cherries, over which mountain herbs and orange peel sway. On the palate it is rightly bitter and persistent. Beautiful as a digestif or paired with dark chocolate. 18% alcohol. – Squadra Vaira
