Juicy, savoury too with an umami quality of white mushrooms and white miso, Scotch Finger biscuit, flinty with it, saline and savoury on a long lime-laced finish. Complex and individual. Notes
A blend of 5 vineyards including sub-regions Tuerong, Main Ridge, Merricks, Shoreham and Merricks Nth. All the fruit was hand picked and pressed straight to barrels and puncheons without SO2 to oxidise the juice. The wine is left on gross lees after ferment to then go through Malolactic fermentation. The wines are left on gross lees with an occasional stir and are only sulphured prior to bottle with a minimal addition. 20 percent new Oak. – Will Byron, Onannon
