NV Airlie Bank Yarra Cuvée Sparkling

This wine comes from a solera tank, a ‘grandfather’ blend of seven vintages, going back to 2018. Each year a portion of the blend is bottled, and then replenished from the most recent harvest.

The grapes for our sparkling are often the first pick of the vintage – harvested in the cool of the night and swiftly transported to the press. The free-run juice is carefully separated and chilled immediately. Fermentation takes place on high solids at 17-20°C over two weeks. Once complete, the fresh vintage wine is combined with the solera blend, with lees stirring occurring bi-monthly in-tank over six months, prior to secondary fermentation in Charmat, preserving its vibrant freshness. This sparkling wine is a Pinot Noir-dominant blend, complemented by a touch of Chardonnay.
