The NV Thalia Sparkling opens with fresh citrus and green apple aromas, complimented by delicate notes of white blossom, brioche, and toasted nuts. On the palate, it is crisp and vibrant, with bright acidity and a fine, creamy mousse with notes of lemon zest, pear, and stone fruit. Toasty complexity. All fruit was gently pressed and fermented in stainless stell tanks at very cool temperatures. Over twenty different parcels were fermented separately for this wine. The final cuveé was a blend of 2022, 2021, 2020, 2019, 2018 and 2017 wines. Some of these older wines were aged in old French oak barrels to further build richness and complexity. – Liam McElhinney, Winemaker
